Not much to report today, other than HAPPY BIRTHDAY MARK! We had an awesome time last night in Galway. We took Courtney to a pub to listen to some "trad" music which was great. We bought a CD of Irish folk songs when we got here to listen to in the car, so it was fun to hear a few of those songs live. Galway is a totally bustling place at night since it is pretty much a college town. So it was a typical Thursday night- glad to see it's the same at all colleges- party night!This morning we went to see the Spanish Arch- supposedly the most striking feature of the Glasgow harbor. Uh... it really wasn't all that, but there was a coffee shop next door so the trip wasn't a total bust. Courtney and I did a little shopping and then we blew out of town to make a run for the border. We drove from the west to the east coast of Ireland to get to Dublin for our flight to Glasgow. It was a great way to see the countryside.Now we're in Glasgow where we enjoyed an evening of Scottish food. We all were very brave and even tried haggis! As you may know, Mike Myers believes all Scottish food is based on a dare. See if you agree. According to wikipedia, haggis is made of the following:Haggis is a dish containing sheep's 'pluck' (heart, liver and lungs), minced with onion, oatmeal, suet, spices, and salt, mixed with stock, and traditionally simmered in the animal's stomach for approximately three hours. Most modern commercial haggis is prepared in a casing rather than an actual stomach.Sounds delish, no? We actually liked it.
